caponata Siciliana
Sicilian Caponata is a traditional Sicilian eggplant dish that's very popular in Italian cuisine. It's a savory and sweet vegetable stew that typically includes eggplant, tomatoes, celery, olives, and capers. The dish is known for its rich and complex flavors, combining the sweetness of tomatoes and raisins with the saltiness of vinegar and the saltiness of olives and capers.

Sicilian Caponata:
Ingredients:
- 1 large eggplant, diced
- 2 tablespoons of salt
- 1/2 cup olive oil
- 1 onion, finely chopped
- 2 celery stalks, chopped
- 1 can (14 oz) diced tomatoes, drained
- 1/3 cup tomato paste
- 1/4 cup red wine vinegar
- 2 tablespoons of sugar
- 1/4 cup capers, rinsed
- 1/2 cup green olives, pitted and sliced
- 2 tablespoons pine nuts, toasted
- 2 tablespoons of raisins
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions:
- Place the diced eggplant in a colander, sprinkle with salt, and let sit for about 30 minutes. This helps remove excess moisture and bitterness from the eggplant.
- Rinse the aubergines thoroughly and dry them with paper towels.
- In a large skillet or frying pan, heat the olive oil over medium heat. Add the diced eggplant and cook until golden and softened. Remove the eggplant from the pan and set aside.
- In the same pan, add more olive oil if necessary. Sauté the chopped onion and celery until softened.
- Add the diced tomatoes, tomato paste, red wine vinegar, and sugar. Cook for a few minutes until the mixture thickens.
- Add the cooked eggplant back to the pan, along with the capers, olives, pine nuts, and raisins. Stir well and cook for about 10-15 minutes, allowing the flavors to meld.
- Season with salt and pepper to taste. If the caponata is too acidic, you can add a little more sugar.
- Once the caponata has thickened and the flavors have blended, remove it from the heat and let it cool to room temperature.
- Serve the Sicilian Caponata at room temperature, garnished with fresh basil or parsley.
Sicilian caponata is often served as an appetizer, side dish, or even as a topping for crusty bread. It can be enjoyed immediately, but it's also known to enhance its flavor if marinated for a few hours or overnight.
