Ravioli are a type of stuffed pasta typical of central-northern Italy, square or round in shape, usually filled with ricotta, vegetables, meat or fish. The first written traces date back to the 14th century, with disputed origins between Liguria and Tuscany. Today there are many regional variations. Tortellini are a specialty of Emilia-Romagna, characterized by their ring shape that, according to legend, recalls Venus' navel. The traditional filling is based on meat (ham, mortadella, pork) and Parmesan. Historically served in broth, they are a typical holiday dish.
