Le Haut-Adige, \u00e9galement connu sous le nom de Haut-Adige, est une r\u00e9gion des Alpes italiennes connue pour son relief montagneux et son riche patrimoine culinaire. Le speck de cette r\u00e9gion a obtenu la reconnaissance d&#039;une Indication G\u00e9ographique Prot\u00e9g\u00e9e (IGP), ce qui signifie qu&#039;il doit \u00eatre produit selon des m\u00e9thodes sp\u00e9cifiques et dans l&#039;aire g\u00e9ographique d\u00e9finie pour porter cette appellation. Le Speck Alto Adige IGP est g\u00e9n\u00e9ralement fabriqu\u00e9 \u00e0 partir des pattes post\u00e9rieures du porc, sal\u00e9es et s\u00e9ch\u00e9es, puis laiss\u00e9es s\u00e9cher \u00e0 l&#039;air pendant un certain temps avant d&#039;\u00eatre fum\u00e9es sur un m\u00e9lange de bois, g\u00e9n\u00e9ralement du h\u00eatre et du gen\u00e9vrier. Le processus de fumage donne au speck sa saveur et son ar\u00f4me caract\u00e9ristiques. Il est souvent d\u00e9gust\u00e9 coup\u00e9 en fines tranches comme ap\u00e9ritif ou en-cas, accompagn\u00e9 de pain, de fromage et peut-\u00eatre d&#039;un verre de vin.
