Il a obtenu la reconnaissance DOP le 25 juillet 2012.&nbsp;<\/p>\n<p><\/p>\n<p>Pour la production de <b>Squacquerone <\/b>di Romagna AOP: lait de vache entier collect\u00e9 dans l&#039;aire g\u00e9ographique typique, ferments lactiques (bact\u00e9ries lactiques indig\u00e8nes) additionn\u00e9s de greffage naturel, pr\u00e9sure et sel. Les races bovines utilis\u00e9es pour la production de lait certifi\u00e9 sont la Frisonne italienne, la Pezzata Rossa, la Bruna Alpina et la Romagnola. Une grande attention est port\u00e9e \u00e0 l&#039;alimentation des vaches, le cahier des charges de production pr\u00e9voit l&#039;utilisation de fourrages et d&#039;ensilages produits dans l&#039;aire g\u00e9ographique pour au moins 60%.
