Le lait ainsi transform\u00e9 est ensuite d\u00e9coup\u00e9 en cubes qui, maintenus sous agitation et chauff\u00e9s de mani\u00e8re appropri\u00e9e, se contractent jusqu&#039;\u00e0 prendre la forme de flocons mous. S\u00e9par\u00e9ment, un m\u00e9lange de cr\u00e8me de lait et de sel est pr\u00e9par\u00e9, qui est amen\u00e9 \u00e0 la bonne consistance gr\u00e2ce \u00e0 l&#039;ajout de farine de graines de caroube (un \u00e9paississant naturel). Les flocons et la cr\u00e8me de lait sont m\u00e9lang\u00e9s dans les proportions appropri\u00e9es et conditionn\u00e9s dans des barquettes Jocca qui sont ensuite conserv\u00e9es \u00e0 temp\u00e9rature r\u00e9frig\u00e9r\u00e9e pour pr\u00e9server au mieux ses caract\u00e9ristiques et son go\u00fbt.
