Alto Adige, tambi\u00e9n conocido como Alto Adige, es una regi\u00f3n de los Alpes italianos conocida por su terreno monta\u00f1oso y su rico patrimonio culinario. El speck de esta regi\u00f3n ha obtenido el reconocimiento de Indicaci\u00f3n Geogr\u00e1fica Protegida (IGP), lo que significa que debe producirse seg\u00fan m\u00e9todos espec\u00edficos y dentro de la zona geogr\u00e1fica definida para llevar este nombre. El Speck Alto Adige IGP se elabora t\u00edpicamente a partir de las patas traseras del cerdo, se sala y se cura, luego se deja secar al aire libre durante un per\u00edodo de tiempo antes de ahumarlo sobre una mezcla de maderas, generalmente haya y enebro. El proceso de ahumado confiere al mota su sabor y aroma caracter\u00edsticos. A menudo se disfruta cortado en rodajas finas como aperitivo o refrigerio, acompa\u00f1ado de pan, queso y quiz\u00e1s una copa de vino.
