In this rather small area there is a mix of factors (soil, light, temperature, quality of irrigation water) which have a positive effect on the product, making it tastier, more resistant, more attractive, fragrant and consistent.<br>The close link between the characteristics of this tomato and the peculiarities of the territory of origin have made it possible to establish the recognition of the IGP (Protected Geographical Indication) quality mark, and today the authentic Pachino tomato is protected by a special distinctive mark that a Protection consortium strives to apply on the basis of a specific production specification.<br>The high quantity of antioxidants must also be attributed to the production area. Here, in fact, the prolonged exposure of plants to the sun&#039;s rays seems to be at the origin of the synthesis of lycopene, an antioxidant that recent studies have established as having important anticancer properties.
